hi everybody everybody I'm back and
today today Dina young is gonna show you
all how to make an amazing broccoli
salad today this broccoli salad requires
very few ingredients and it's amazing
this broccoli salad is nice and creamy
listen here it's crunchy
it's sweet its tangy it is a definitely
a recipe you want to make for your loved
ones I'm gonna show you all today how
Dini young makes broccoli salad here's
what you're gonna need the ingredients
that you will need you will need fresh
broccoli don't use broccoli that has
been frozen you will get the best
results by using fresh broccoli make
sure when you bring your broccoli home
that you take the time to clean your
broccoli off clean your broccoli off by
soaking your broccoli in cold water
changing the water and soaking it maybe
two more times in you know you'll have
nice clean broccoli the ingredients that
you will need you're going to need sugar
as well as bacon if you're that person
that's not a fan of pork bacon then by
all means you can skip the bacon you
don't have to use it
we're gonna use some shredded matchstick
carrots okay as well as a red onion
you will need sharp cheddar cheese I
don't suggest when you use your cheddar
cheese that you get the really really
really fine one okay you will need
mayonnaise as well as apple cider
vinegar
you're gonna need sea salt and cracked
black pepper as well as raisins okay
that's all the ingredients that you're
gonna need now some people might say
that they like to blanch their broccoli
before making this recipe I don't feel
like you have to blanch the broccoli for
this recipe because once everything
marries all together
with the sugar the mayonnaise the apple
cider vinegar and all of the other
ingredients the broccoli will soften up
and I highly suggest making this recipe
today before you serve it it tastes
better the day before you serve it you
all have ever heard of if you make
spaghetti it tastes better too the next
day well that's definitely how this
recipe is make it the day before you
serve it because it tastes taste much
better when everything has a chance to
marry all together now the first thing
that we're going to do is make sure that
you've washed your broccoli off and now
we're gonna go ahead and I'm going to
show you how you should cut your
broccoli very simple everything that I
do on this kitchen is so easy and you
can do this as well you're gonna chop
off the long part of your broccoli okay
you're going to chop off a little bit
more so that your florets look somewhat
like this see how it has a little bit of
the stem and then what you can do is you
can pull it apart in this manner okay
or you can chop it it's really up to
your discretion but only leave a little
tiny bit of the stem okay now so if I
see a large stem I'm just gonna chop it
I'm gonna pull this apart just like so
all right if you want it to chop it
you're just gonna do this okay try to
make it all the same size just like so
then we're gonna do both hits the same
way now a lot of people when they make
broccoli salad they will use sunflower
seeds I didn't want sunflower seeds in
mind so I'm not going to use it but if
you're that person that says yes
I want the sunflower seeds of mine well
what you do is you turn around and get
you a half a cup of sunflower seeds and
just throw it in with all the other
ingredients all right if you didn't want
to use sunflower seeds feel free to use
pine nuts all right so we're gonna chop
this just like so I cannot wait to sink
my teeth down into the salad
every time I make this salad I eat as
much as I can because I love it
the flavors are absolutely amazing
together
so you have the flavor of the sharp
cheddar that's a little tangy you have a
little bit of Tang from the apple cider
vinegar and then you have the beautiful
sweetness from the sugar and then you
have the creaminess from our mayonnaise
you don't have to use Duke's mayonnaise
I choose to use Duke Duke mayonnaise
because I absolutely love it if you're
that person that likes to use Miracle
Whip if you use Miracle Whip then you're
gonna skip the sugar okay because
Miracle Whip has sugar in it and I don't
want yours to be over sweetened all
right
so if you're gonna use Miracle Whip
don't use any sugar in yours all right
and really it's that simple so I'm just
gonna chop this down just like this I
hope that you all are having a beautiful
day a beautiful work day I hope that you
all had a beautiful weekend as well okay
so we're just gonna finish chopping this
up just like so and then I'm going to
show you our next step our next step
we're going to chop up our bacon okay
and then we're going to fry the bacon
now it's really up to your discretion
whether you want to fry your bacon whole
or you can chop it up and fry it either
way you do it it would be just fine
because if you fry at all when it's done
you can chop the bacon up or you can
chop it up ahead of time before you fry
it okay either way you do it it will not
make a difference okay we're just about
done with this
side now if you want to make a whole
whole lot of salad I highly suggest
grabbing about six heads of your fresh
broccoli I'm using two whole heads and
twos gonna give me just enough so we can
have dinner today dinner and a snack and
that's gonna feed four of us today okay
so here's what we have if you're that
person that says okay Gina but I want to
blanch my broccoli then here's what you
do you turn around and you boil some
water once your water comes up to a boil
you're gonna throw your broccoli in the
water and then you're gonna boil your
broccoli for five to six minutes and
then you're going to take the broccoli
out of the water and then you're gonna
put your broccoli into an ice bath where
you take your bowl and you put ice in it
and then you put cold water and you're
going to put your broccoli in there to
shock it to stop the cooking process and
what that will do by blanching your
broccoli is it'll make your broccoli a
little bit softer but like I said I'm
not going to do it because I feel like
when you let it sit overnight the
broccoli get soft by itself so I'm going
to skip that part all right so we have
this here next I want to get rid of this
part and then we're going to cut our
onion and our bacon okay right here I
have a large red onion if you wanted to
use a white onion absolutely you could
but traditionally you would use a red
onion in your broccoli salad
now this large onion I'm not going to
use that full onion so here's what we're
gonna do we're gonna chop this in half
and I'm going to use a half of this
onion all right a half that's gonna give
me that perfect amount of onion that you
will need all right
this other hath I'm gonna wrap it in
plastic wrap and use it in my dish for
later alright so we're just going to
chop this up just like so okay
now you don't want to have very huge
pieces you can chop them as fine as you
want
but you do want to be able to see the
onions me personally I chop mine's kind
of medium not too big and not too small
okay and honestly this looks like quite
a bit of onions I might not use all of
that I'm not gonna use all of that what
I'm gonna do I'm gonna chop up this bit
right here a little bit smaller and then
we're gonna throw this right in with our
bowl of the broccoli that right there
that's all you need if you're a person
that doesn't like onions um then by all
means you don't have to use the onions
okay so we're gonna put our broccoli
it's a little Bowl here alright and then
let's go ahead and put our beautiful red
onion right on them there just like so
and you see I really didn't use all of
that red onion all right just like
soaked it right down on in there okay
okay everyone the onions have me crying
alright but that happens hey listen here
we're really cooking in this kitchen so
now I'm just going to chop up the bacon
just like so try to make them all the
same size you don't want some big some
big and some small and then we're gonna
give these a nice fry until they become
golden brown you don't want to cook
these until they're you know just barely
done you want to make sure they have
that beautiful golden brown crisp okay
and I'll show you exactly what we're
looking for me personally I like to use
a lot of bacon when I make mines now how
many pieces did I use I
leave I'm using six pieces I honestly I
did not count the pieces sorry about
that
alright let's make our way over to our
pan here's our pan that we're gonna use
and we're just gonna spread our bacon
apart just links up I'm gonna turn that
on to a medium high heat and get that
bad boy cooking up nice and golden-brown
once it starts to brown up I'll be back
I'm gonna wash my cutting board I'm
gonna wash my hands I'll be right back
okay everyone while our bacon starts to
cook up and get nice and golden brown
I'm gonna put some shredded matchstick
carrots in there now you all that know
me and that are familiar with me you
know that I'm not a fan of carrots I
don't like carrots but I'm gonna tell
you one thing if the recipe calls for
shredded carrots and listen here I'm
gonna put it in there and I'm gonna
enjoy it
but I'm not gonna put too much to where
I can't enjoy it okay so you see I just
put just a little bit for that pop of
color okay I put just a little bit of
carrots in there not enough to ruin the
dish alright but if you're a fan of
carrots then you put as much as you
would like to have in yours so so far we
have our beautiful nice and clean
broccoli okay that we've chopped up we
have our red onion and we also have our
carrots now we're gonna go in with the
cheese yeah it's up to your discretion
how much cheese you want in there listen
here don't get crazy with the cheese we
all absolutely love cheese right but
don't put too much in there because you
want to be able to taste all of the
flavors you want to be able when you
bite down into this dish you want to be
able to taste every single flavor that's
in this dish and by putting too much
cheese in there you can kind of ruin it
so put just a little bit how much is a
little bit just a little bit guys I know
I say that a lot but you all seen
exactly how much I put in there not too
much all right now we're gonna put some
salt
you have to put your some salt in here
that's enough and then I'm going to turn
it this way and put some cracked black
pepper in okay just like so in this
manner give me a little bit more cracked
black pepper it makes it taste better
beautiful all right so let's take a peek
in over at our bacon our bacon is doing
just fine you really don't have to
bother the bacon you'll start to see
once it turns golden brown then you can
go in with your fork or your spatula and
give it a nice turn now you can see that
I've taken another ingredient out this
ingredient is heavy whipping cream okay
now the only way I would use this I'm
not actually saying I'm gonna use this
just yet only way I would use this is if
I feel like my sauce is a little too
thick if it's a little too thick then
I'm gonna take heavy whipping cream I'm
gonna pour it into my mixture and thin
it out a little bit if you don't want to
use heavy whipping cream then feel free
to use milk okay milk will do the trick
as well since I happen to have heavy
whipping cream I'll use that but here's
the thing it might not even need this
okay so that's why I'm saying I might
not use it but if I feel like it's thick
I will use it I love a lot of bacon and
mines my goodness and I also like a lot
of raisins and mine if you didn't want
to use the raisins you can use dried
cranberries as well both will work
perfect don't forget like I said as far
as the sunflower seeds if you wanted to
use those you can and if you didn't want
to use sunflower seeds you can use pine
nuts okay but all right when I make
mines I don't put any nuts in money but
I have tasted it with sunflower seeds
and it's absolutely amazing
okay we're gonna let that cook up
and I'll be showing you how to make our
beautiful sauce
[Music]
now I wanted to tell you all something
when you're making this recipe you can
use hard slop hard salami absolutely
amazing in this dish and if you use hard
salami you just kind of chop it up like
I did the bacon but you don't have to
cook the hard salami okay you can use
pepperoni and just chop it up or you if
you know if you're not a fan of the pork
you can use the turkey pepperoni amazing
in this dish I just wanted to let you
all know that make sure our bacon is
almost done that I do want to make sure
every piece gets nice and golden brown
make sure when you take your bacon out
you drain it on a nice paper towel
because if you don't you'll have greasy
salad and we don't want to digest that
grease we don't want any extra oil that
we don't need to intake so you take your
your bacon out when it's done set it on
a paper towel for about five minutes and
then you can take a paper towel and just
kind of block the top of it to get all
that extra oil off of your bacon okay
also there's one more thing that I
wanted to mention if you wanted to put
your bacon in the salad hot what would
happen is your cheese would melt so you
don't want to put the bacon in there hot
make sure that your bacon is fully fully
fully cooled down before it goes into
the salad okay now about the mayonnaise
those of you that would prefer to use a
low-fat mayonnaise absolutely you can
you can use low-fat mayonnaise you can
use a olive oil mayonnaise whatever
floats your boat okay so our bacon is
just about done we're gonna get ready to
take that out blot it with a nice paper
towel okay our bacon is nice and drained
nice and beautiful and crispy
our salad is almost done now let's go
ahead and measure out our mayonnaise now
all depends on if you want yours nice
and creamy or if you want yours
you know not so creamy then you use as
much mayonnaise as you would like to use
I'm going to use one cup of me up all
right I'm gonna measure that out just
like so and then I'll let you know
exactly how much apple cider vinegar you
should use in the sugar as well I'm
gonna eyeball them but I'll let you know
the correct amount you should use as
well there's our one cup of mayo if I
feel like I need a little bit more mayo
then really it's that simple just put
you some more in if you want it nice and
creamy okay but don't overdo it don't
overdress your salad because like I said
you want to be able to taste everything
else but if I need more I will so let's
put our sugar in just like so I'm gonna
put two teaspoons there's one teaspoon
two teaspoons of sugar just like so if
you're a person that wants yours a
little bit sweeter then it's okay to use
a little bit more alright we're going to
use apple cider vinegar any kind of
vinegar that you wanted to use would be
fine if you had white vinegar if you
have rice wine vinegar you can use that
alright
one teaspoon two teaspoons we're gonna
take our whisk we're gonna whisk
everything together and then you want to
give it a taste if you're happy with the
taste then you leave it just as is if
you're not happy with the taste then you
adjust a taste to how you would prefer
to have it okay me personally I like
mine's a little sweet and I like mine's
a little tangy as well but also nice and
creamy okay I like to mix mine separate
some people they like to just pour
everything into you know this bowl but I
feel like when you do that you don't
really have a chance to dissolve your
sugar and what I'm doing right now is
I'm dissolving my sugar and I'm gonna
know by time I pour this mixture into
here the sugars gonna be nice and
dissolved and the way you'll know if
your sugar is dissolved is the sugar
will become silent okay
you won't hear it as much I'm gonna give
this a taste see what it tastes like and
see if I'm happy with the way I've made
it if not then I'll make adjustments
remember I put salt and pepper in here
if you wanted to put your salt and
pepper in here absolutely you can it
really wouldn't make a difference I'm
happy with the Mayo I'm happy with the
cider I feel like I need a little bit
more sugar and I'm gonna do just that
it's almost gonna taste like a coleslaw
dress okay that's what it puts you in
the frame of thought of this right here
should do me let's give that a taste oh
yeah baby now see listen here now
now we're talking that's amazing okay
everyone I've stirred this until you
cannot hear the sugar anymore hear how
it's nice and
silent that's what you're wanting you
know that your sugar is well dissolved
okay let me grab a soft spatula so that
we can pour our sauce down into and get
all that sauce out get all of that sauce
out don't you waste anything whoo yes
right here it's gonna turn heads you
hear me
make this for your loved one and let me
know what they think let me know what
they think I would love to hear the
comments
this right here is definitely a salad
you want for your family and friends
here's our bacon take the time to drain
your bacon and cool your bacon down and
we are going to I didn't feel like I
need it to thin out my sauce so we don't
have to use the heavy whipping cream and
that's awesome
but if your sauce somehow it's too thick
for you then you just use some milk or
heavy cream to thin it out now I'm gonna
grab my raisins out and you can use as
much raisins as you would like to use we
pull our raisins in we'll give this a
nice mix we're gonna see a beautiful
blessing over our broccoli salad we're
gonna dive in and give this a try and
I'm gonna let you all know what it
tastes like okay everybody let's start
out with two boxes of raisins and right
away I can tell that I'm gonna need a
little bit more raisins so I think I'm
going to use maybe one more box will do
the trick I'm putting our third box of
raisins in like I said feel free to use
dried cranberries as well beautiful this
is the salad guys this is a salad that I
