welcome back to house Clark we're making
a Mediterranean quinoa salad bring 2
cups of water up to a boil add 1 cup of
quinoa stir lower your temperature
setting and allow that to slowly simmer
for 15 minutes we're gonna roast some
garlic take the bulb and slice it in
half to prepare the garlic for the oven
drizzle on some canola oil sprinkle on
some salt
black pepper and add a light sprinkle of
garlic powder
have your oven set at 350 bake pour some
oil in your pan and now as your garlic
roast the garlic in the oven for five to
10 minutes or until the bottoms have
become golden brown
the quinoa is done we're gonna pour that
over into a mixing bowl and set that off
to the side to cool
our garlic is done so I'm gonna flip
this one over so you won't can see how
beautiful golden ground it is and we're
just going to set this to the side to
cool as well
while we wait for the quinoa and garlic
to cool we're gonna go ahead and chop up
our other ingredients you need a big
handful of parsley and you want to chop
that finely dice 1/4 of a medium-sized
red onion diced 1/4 cup of sun-dried
tomatoes the easiest way I've found to
dice up sun-dried tomatoes is just to
take a pair of scissors and cut through
them take 1/2 a cup of kalamata olives
and slice them in quarters
okay we finished chopping up all of our
vegetables and this looks so good I
could just grab a fork right now but
let's get to putting this salad together
to remove the garlic from the bulbs just
give it a good squeeze and most of them
will just pump right out there's a few
of them that you may have to go in with
the small knife and take out for the
majority will come out with this method
I will be using one bulb of garlic but
this is your recipe so you can use as
much or as little as you like
our quinoa school so now we're gonna go
ahead and add in all of our other
ingredients pouring those beautiful
vegetables that we just chopped up
and the garlic
and salt and pepper to suit your taste
drizzle on one tablespoon of olive oil
stir all of your ingredients together
you can serve this salad right away or
you can store it in your refrigerator to
serve at a later time thank you again
